Services—Post-Opening Management & Back-Office Support
Opening night is not the finish line - for most of the concepts we've worked with, it's closer to the starting line of the phase that actually determines whether the business survives.

Scope of work
Opening night is not the finish line - for most of the concepts we've worked with, it's closer to the starting line of the phase that actually determines whether the business survives. We provide ongoing post-opening management for restaurants, cafes, standalone F&B concepts, hotel outlets, and larger cultural or entertainment destinations across Dubai, the wider UAE, and the GCC, taking on the day-to-day operational oversight, back-office accounting, and HR support that keeps a business running the way it was designed to, long after the opening party is over.
This is where a lot of consultancies step away. We don't - we stay on, running the outlet's back office so the owner isn't managing it alone once the doors are open.
Ongoing operational management
And performance oversight of the outlet.
Back-office accounting
Bookkeeping, financial reporting, and cost tracking against budget.
HR management
Payroll coordination, staff records, performance management, and ongoing recruitment as the team evolves.
Operational audits
To identify where the business is underperforming or losing margin.
Supply chain and vendor management
Once the business is trading, not just during pre-opening.
Cost control across food, beverage, and labor
Reviewed on a recurring basis.
Reporting to ownership
On performance against the original business plan and financial model.

Key challenges
Post-opening, the questions we get brought in on are almost always the same two: where exactly is the money leaking, and why isn't the business performing the way it was supposed to.
Margin Quietly Disappearing Without Anyone Noticing
Sales can look healthy on the surface while margin quietly disappears into untracked wastage, inconsistent portioning, an HR structure that's grown without a plan, or supplier pricing that's crept up without anyone renegotiating it.
Leakage Not Found Until a Full Quarter's Numbers
Owners who are hands-off, or who are running multiple outlets, often don't find out where the leakage is happening until it's shown up in a full quarter's numbers.
Back-Office Functions Deprioritized After Opening
Back-office functions like accounting and HR are also frequently the first things to get deprioritized once the excitement of opening wears off - which is exactly when they matter most.
Our approach
“This is not advisory work delivered from a distance.”
We manage the outlet's back office directly - running the accounting, handling HR administration, and keeping a continuous, close view of how the business is actually performing against the plan it was opened against. Because many of the outlets we support post-opening are ones we've also taken through concept development, fit-out, and launch, we're reviewing performance against numbers we modeled ourselves, not numbers we're seeing for the first time.
Where we're brought in on a business we didn't originally build, we start with an operational audit - food and labor cost, supplier terms, staffing structure, financial reporting discipline - to find where the leakage actually is before recommending fixes. Throughout, the client keeps ownership of every decision; we handle the ongoing legwork of accounting, HR, and performance tracking so that oversight doesn't fall entirely on the owner's shoulders.
Direct Management
Accounting and HR run by us, not advised from a distance.
Operational Audits
For businesses we didn't originally build.
Continuous Tracking
Performance reviewed against the original plan, ongoing.
Expected outcomes
Clear, current financial reporting, so performance issues are visible in weeks, not discovered a year later.
No budget surprises on an ongoing basis - food, beverage, and labor cost tracked continuously, not reviewed only when something feels wrong.
A reliable supply chain maintained after opening, with vendor terms and performance reviewed on a recurring basis.
HR administration and staffing structure that keeps pace with the business as it grows.
A clear answer, when something isn't working, to where exactly the leakage is happening and why.

Location Relevance
We manage post-opening operations for outlets across Dubai, Abu Dhabi, and the wider UAE, as well as Saudi Arabia, Qatar, and Oman. Accounting standards, labor law, and HR requirements differ by market, and our back-office support is run against the specific regulatory environment each outlet operates in.
Common questions
Q. Do you only offer this to businesses you built from the start, or can you take over an existing outlet?
A. Both. We support outlets we've taken through concept and launch, and we're regularly brought into existing businesses specifically to run an operational audit and take on ongoing management from there.
Q. What exactly does "back office" include?
A. Bookkeeping, financial reporting, and cost tracking on the accounting side; payroll coordination, staff records, and performance management on the HR side - the administrative layer that keeps a restaurant running smoothly behind the scenes.
Q. How do you identify where a business is leaking money?
A. We start with an operational audit - reviewing food and labor cost, supplier pricing, staffing levels, and financial reporting discipline - to find the specific gap between what the business should be making and what it's actually making.
Q. Is this a full-time, ongoing engagement or a one-off review?
A. It can be either, depending on what the business needs. Some clients bring us in for a defined operational audit; others engage us for ongoing management of accounting, HR, and performance oversight.
