Scope of work
Across Dubai, Abu Dhabi, and the wider UAE, a striking interior can get a restaurant noticed for opening week. Whether it holds up depends on what happens behind the render - how the design was budgeted, coordinated, and actually built. We work with restaurants, cafes, standalone concepts, hotels, and larger destinations like museums, stadiums, and waterparks to design dining and hospitality spaces that align with the brand and hold together operationally once the doors open.
The outcome we're building toward isn't a beautiful set of drawings. It's a finished space that matches the vision, opened on budget, and built to actually run a business in. We build it ourselves, on-site, through to handover - and our involvement doesn't stop there. Through our post-opening management support, we stay close to how the space actually performs once real service begins, not just how it looked on approval day.
Interior concept design
Aligned with the brand identity and guest experience you're going for.
Space planning
Across front-of-house, back-of-house, and guest flow.
Material, finish, and furniture selection
Matched to concept and budget.
Lighting design
Coordinated with the overall look and the practical needs of service.
Vendor coordination
With joinery contractors, lighting suppliers, and furniture vendors.
Design development tracking
Tracked stage by stage against the approved budget.
Ongoing involvement through fit-out
Not a handover after the concept is signed off.

Key challenges
Most interior design problems in F&B aren't about taste - they're about what happens after the design is approved.
A Design Brief Never Grounded in a Real Market Gap
We regularly step into pre-opening projects where the design brief was never grounded in a real market gap.
No Real Read on What the Interior Costs to Build and Run
Nobody worked out what the interior would actually cost to build and run against the business plan.
Coordinating Designers, Contractors, and Suppliers
A concept can involve 40 to 50 vendors during pre-opening, and on the design side alone that means designers, joinery contractors, lighting suppliers, and furniture vendors who all need to be pulling in the same direction and on the same timeline. Left uncoordinated, that's where budgets drift and openings slip.
Our approach
“We're not a design studio that hands over a set of renderings and moves on to the next brief.”
Design at Glee is tied directly into execution and project management - that's the point of doing it in-house rather than outsourcing it as a standalone creative exercise. We coordinate the designers, track design development against the approved budget at every stage, and stay involved through the physical build, not just the concept phase.
In practice, that means we handhold the client through the process - managing the day-to-day coordination between designers, contractors, and vendors - while the client keeps final sign-off on the decisions that matter. If a finish falls out of budget or a supplier can't deliver on time, we catch it during development, not on-site during fit-out when it's expensive to fix. The design and the build are one continuous process for us, run by the same team, because that's the only way we've found to keep a beautiful concept from turning into a budget or schedule problem.
Design Coordination
Designers, contractors, and vendors, managed day to day.
Budget Tracking
Checked at every stage, not discovered at tender.
One Continuous Process
Design and build run by the same team.
Expected outcomes
No budget surprises on design and fit-out costs, because development is tracked against budget throughout, not discovered at tender.
No MEP surprises in the space, since design decisions are checked against the practical realities of the site early.
A design that's actually buildable with the vendors and timeline available, rather than one that looks good on paper and stalls in execution.
A finished interior that reflects the brand and the guest experience it was designed for.
Project examples
Location Relevance
We're based in Dubai and work on interior design projects across the UAE - Dubai, Abu Dhabi, and beyond - as well as the wider GCC, including Saudi Arabia, Qatar, and Oman. Each of these markets has its own vendor landscape, regulatory quirks, and guest expectations, and our approach adjusts to the market a project is actually opening in rather than applying one template everywhere.
Common questions
Q. Do you design the interior or manage the whole fit-out?
A. Both, and we don't separate them. We coordinate the design work and stay involved through the physical build, because a design that isn't managed into execution rarely comes out the way it was intended.
Q. Who has final say on design decisions?
A. You do. We manage the day-to-day coordination with designers and vendors, but key decisions come back to you for sign-off throughout the process.
Q. Can you work with a designer we've already hired?
A. Yes. We can coordinate an existing designer's work against your budget and timeline, or bring in designers from our own network, depending on the project.
Q. Do you handle interiors for venues beyond restaurants?
A. Yes. Alongside restaurants and cafes, we've worked on interiors for hotels and larger destinations, including cultural and entertainment venues.
