Services—Menu Development
A menu is the single most important sales tool in any F&B business, and it's also where a lot of Dubai and UAE concepts quietly lose money before they ever open.

Scope of work
A menu is the single most important sales tool in any F&B business, and it's also where a lot of Dubai and UAE concepts quietly lose money before they ever open. Whether you're launching a standalone restaurant or cafe, building an F&B offering inside a hotel, or designing food service for a museum, stadium, or waterpark, the menu you land on has to do two jobs at once: make sense to your guest and make sense on a cost sheet.
Our menu development service is built for anyone entering or already operating in F&B across Dubai, the wider UAE, and the GCC who wants a menu that's genuinely commercially viable, not just creatively appealing. The outcome we're working toward is straightforward: a menu that sells, that your kitchen can actually execute night after night, and that doesn't blow up your food cost six months in. We build this menu with you ourselves, hands-on, through hiring, tastings, and trials - and we don't disappear at launch. Through our post-opening management support, we keep reviewing dish performance, cost, and guest response once the menu is actually in guests' hands.
Creating innovative, commercially viable menus
Tailored to your concept and your target guest.
Hiring the chef
Who will develop and run the menu, not just handing you a recipe file.
Coordinating tastings and trials
So dishes are tested, adjusted, and signed off before launch.
Managing supplier relationships and sourcing
To match the menu you're actually building.
Recipe testing and standardization
So every dish is repeatable at volume.
Costing every dish
Against real ingredient and supplier pricing, not estimates.
Aligning the menu with kitchen design
Equipment, and staffing already in motion.

Key challenges
Most menu problems don't start with the food - they start with the business context around it.
Misjudging the Actual Market Gap
We regularly see teams misjudge the actual market gap, building a menu for a guest that doesn't quite exist in that location.
Menus Written Before Real Costs Are Known
We see menus written before anyone has priced out the real cost of running them, which means food cost percentages get discovered the hard way, after opening.
The Coordination Load Gets Underestimated
A single pre-opening project can involve 40 to 50 vendors, and menu development alone touches a meaningful chunk of that - chef recruitment, produce and protein suppliers, packaging, specialty ingredients. Without someone managing that web directly, menus drift from what was designed to what's convenient to source, and margins suffer.
Our approach
“A menu document with no execution behind it isn't actually a working menu.”
This is where we differ from a typical consultancy, and it matters. Plenty of firms will write you a menu on paper - a document with dish names, descriptions, and maybe a suggested price - and consider the job done. We don't work that way, because a menu document with no execution behind it isn't actually a working menu. We handhold the entire process ourselves.
That means we hire the chef who will bring the menu to life, sit through the tastings and trials with you, negotiate directly with suppliers, and stay involved through recipe testing and costing until every dish is standardized and priced correctly. You keep final sign-off on the decisions that matter - the final menu itself is yours to approve - but the day-to-day coordination, the chasing, the back-and-forth with vendors, is on us. We treat menu development as a project we run, not a deliverable we drop off.
Chef Hiring
The chef who will develop and run the menu.
Tastings & Trials
Sat through with you, not just approved on paper.
Supplier Negotiation
Handled directly, matched to the menu you're building.
Expected outcomes
A reliable supply chain behind every dish and no budget surprises on food cost once you're trading.
A menu that's been stress-tested through real tastings rather than approved on paper alone.
Dishes that are costed accurately from day one.
A kitchen team that's already been through the trial process before opening night.
Menu cost control and menu engineering locked down early, rather than discovered as a blind spot after opening.

Location Relevance
We're based in Dubai and do the bulk of our work across the emirate and the wider UAE, including Abu Dhabi, but the same process applies across the GCC - Saudi Arabia, Qatar, and Oman included. Local supplier relationships and market knowledge differ from one market to the next, and we adjust sourcing and costing assumptions accordingly rather than applying a one-size-fits-all menu approach.
Common questions
Q. Do you only write the menu, or do you help run the process too?
A. We run the process. Writing the dishes is one part of it - hiring the chef, coordinating tastings, and managing suppliers is the rest, and it's the part that actually determines whether the menu works in a live kitchen.
Q. Who keeps final approval on the menu?
A. You do. We manage the coordination and bring you tested, costed options, but the final menu - and other key decisions along the way - are signed off by you.
Q. Can you develop a menu for a non-restaurant venue, like a museum or stadium?
A. Yes. We've built out F&B offerings for cultural and entertainment destinations as well as standalone restaurants, cafes, and hotel outlets, adapting the same process to very different volumes and guest profiles.
Q. How does menu development connect to food cost control long-term?
A. Costing is built into the process from the start, not added afterward. Every dish is priced against real supplier numbers during recipe testing, which is what protects your food cost once you're operating.

It also pairs with Concept Development & Feasibility for anyone still shaping their overall concept.
